What to do with leftover Sweet Potato from your Healthy Eating & Weight Loss Coach


I don’t know about you but I always look for recipes that help keep me healthy on the weekends.  I get my meal prep done on Thursdays for the week and freeze a lot of food.  The weekend though (when I feel lazy) and I look for something quick and easy can be where my commitment drops off.  So, I use this recipe for my Friday night Sweet potato and then I have it fresh on Saturday morning and ready for Sunday morning.

I cook for myself so I often have to deal with grocery store packaging and how to deal with leftovers.  Until they start packaging food for one person that is gluten-free and paleo friendly I will use recipes like this!

Sweet Potato Apple-Cinnamon Pancakes


1 cup (225 g) cold, leftover mashed sweet potatoes

1 apple, peeled and grated

1 egg

1 tsp cinnamon

5 tbsp (40 g) potato starch

¼ tsp salt

Coconut oil or avocado oil for frying


Combine all ingredients into 4 cakes.  Fry in the oil in a skillet over medium heat until a brown crust is formed (about 5 minutes).  Flip and flatten a bit with the back of your spatula.  Cook for another 3 to 5 minutes and remove from heat.  Enjoy!

Wednesday Reflection

More reflection on the retreat…


I am still exhausted all the time.  Thanks to the supplements from Dr Karen F. at Symmetry Wellness Centre my Naturopath I am sleeping well.  I’m following a nutrition plan for carb cycling as well and it’s helping me out a lot.


So, there’s a lot of me time.


A lot of down time.


I listen to “Spa” music on iTunes and journal my thoughts and feelings.  I’m studying for my nutrition certification and studying 4-6 hours a day for my MBA program from the Australian Institute of Business.


I’m making sure my own nutrition involves more water and more leafy greens.  I’m getting used to wearing glasses… #feelingold #lol


What is my business?


What is my business focus?


What do I want to accomplish in the next two years?


Really good questions… I’m hopeful for the answers to come in the next few months.


Working next to two other strong entrepreneurs has been really inspiring at this retreat that Krista Smith organized and held us to.  A great way to connect and see them flesh out their dreams on what they want to do while they’re already running a business to begin with.  She’s got some great tips on her Instagram here:

What’s going on with me?

Well, let me tell you.

I just finished an awesome business retreat called Activate Your Awesome in Orlando, FL. I’ve been a participant in this retreat since it was held originally at Oceanstone Resort in Peggy’s Cove in Nova Scotia. The next time I went it was held at Atlantica Oak Island also in Nova Scotia.

I have had three amazing days of de-stressing, listening and absorbing information about business.

Connecting to soul-mirrors. Other women in business. Ladies who kick some serious butt in their respective fields. Ladies who are curious about more and want change in their lives. And, I get to see Krista Smith in action as a digital media entrepreneur coach working her knowledge to guide and mentor others. She also has another business called Digital Beauty School.

I’m still pursuing my education and my MBA plus later on this year my MscKin.

So, I am busy. But, what does that mean exactly?

When do I grieve my business being finished…

I’m also walking my dogs, working out and eating properly. I have to tell you a secret – I haven’t cooked in over 3 years. I told myself I didn’t have time for it. What a lie. Maybe… All I know now is that I have time for it now and how much do I love cooking?! I love it. My one year old Husky dog is so curious about it because he hasn’t seen me do it until now so his nose is by my side while I cook. My Westie just lays back on her bed and watches me do it all – unless I’m making Gluten free Chicken Noodle Soup (her fav)… then she’s right by my feet telling me she’s here for it.

Time to get into my journal and reflect on what I’ve learned from this retreat…

Happy New Year! My word for 2019 is Reserve

New Year, New You!

How often do you hear that? Especially at this time of year?

A lot. Right?

What is the message you understand from that question?  What resonates with you?

I’ll tell you mine.  I feel defensive.  As though I’m under the spotlight and not already at my best self.  That’s my feeling.  You may not feel the same way.

What I know is that I feel strange navigating the new waters of 2019 because I have said goodbye to a traditional location for my personal training club.  I built it and then I took it away.  For health reasons. So can focus on improving it dramatically this year.

My word for 2019 is: Reserve.

I am reserving my energy for myself.

You may not know this but my father passed away suddenly in 2006 and I joined Canyon Ranch a few years later to get checked out.  I go every year.  The past few years I’ve been lucky to take a few people with me like Amy M., Kaitlyn B., Scott W., and Nancy C.  Their responses have been great and I’ve been happy to share the holistic viewpoint of Canyon Ranch in Tucson, Arizona.  I also took a small group to the Canyon Ranch in Lenox, Massachusetts but it was more of a fun visit than any health driven trip.

What I do know that this IS a new year for me as I am focused on learning more about raynaud’s, low thyroid, celiac, severe adrenal fatigue, cardiovascular disease, plantar fasciitis, and exercise induced asthma.

And, I’ll be doing my videos to help me out.  Why don’t you join me?
